Our cheese is made to 100% out of our animals’ milk. Its special taste derives from the animals’ life in free-range husbandry which offers them a natural and diverse diet.
The mixed goat- and cow’s milk cheese, half-aged, follows a particular production process as it is made with thistle-rennet. This lets our cheese obtain its light properties without losing its authentic flavour. This variety is especially recommended for vegetarians (since no animal ingredients are used along the whole manufacturing process), and for people who have digestion problems or a too high cholesterol level.
Our fresh ‘peretta’ . called like that because of their typical pear-shaped form – is a perfect mozzarella substitute that can be used as cheese spread for almost every dish. Its light flavour allows you to add it to all kinds of accompaniment.
